When Nueske’s bacon made the Final Four of this year’s “Coolest Thing” competition, the field braced for defeat. Who can beat bacon? It’s a fair question. For nine decades, the family-owned company has been applewood smoking its best-loved product in the small Shawano County community of Wittenberg the Nueske family has long called home. Third-generation CEO Tanya Nueske says smoking the bacon “low and slow” is the key to producing the gourmet ingredient that The New York Times once termed the “beluga of bacon” and “the Rolls-Royce of rashers.”
